I've always been too intimidated by horror stories to try baking macarons. I had been yet to taste them. I decided it was high time I changed both facts.

I baked two types of almond macarons for the second day of Christmas. The red macarons are filled with peppermint tea infused white chocolate ganache, the white with cranberry, raspberry and strawberry tea infused white chocolate ganache.

Oh I love macarons, we have made these million times in school but even though you measure everything nearly every second time they get f....d up. I've managed to make perfect macarons maybe once, it's really hard to make them glossy and perfectly smooth and even. Sometimes they look like nipples, somethimes they are crumbly, sometimes they turn brown (I blame the oven at school, it's really shitty but we can't use the big better ovens for these since breads and other bigger pastry need them constantly) etc. I have tried three different recipes and one worked perfectly... only for one time. I don't really know is it just me or what's wrong :'D But you did a great job!

They can be super tricky. Knowing your oven is half the battle won really.

I think the trick is getting the hang of meringue. Once you're confident with that, the rest is easy.

i think the last time i over mixed and i didnt calculate the circles beforehand so some were bigger than others - and on top of that i put too much food dye in @_@

but i loved your fathers day cake - it was sooo good that i ate it all myself and didnt let my family have any of it

so im confident that i can use your macaron recipe and make it work~!

At least you know where you went wrong - that's a really important step in getting it right next time.

They look so perfect, although when I tried to make white chocolate ganache infused with green tea my tea bag wouldn't seep through the cream.

Oh that's annoying. Was the cream hot when you added the tea bag? I found it wasn't until the cream reached a certain temperature that it started to work.

I really want to make macarons myself, but I too am too afraid to attempt it hearing all those horror stories XD

If it helps at all, I wrote a meringue tutorial (there's a link for it in the blog with the macaron recipe). If you can get the meringue to stiff peak stage, and understand what helps it get there and recognise when it is, I think it makes the process much easier.

I really enjoyed them. While I wouldn't call them my favourite dessert I've ever tasted (my favourites tend to be things loaded with fresh fruit or chocolate mousse haha) I really liked them. That said, I've only tasted my own and who knows what they're supposed to actually taste like. There's probably amazing potential for flavour inventions and I'm looking forward to experimenting

How confident are you with meringue? If you're good at it, you'll probably find macarons a breeze. There are lots of tricks and tips to know (don't use a silicone mat, for example), the most important of which I covered in the blog - but that aside they are not as hard as they are made out to be. I think most of the horror stories must come from those who aren't experienced with meringue.
