12 Days of Christmas :: 2 Macarons

Description

I've always been too intimidated by horror stories to try baking macarons. I had been yet to taste them. I decided it was high time I changed both facts.

I baked two types of almond macarons for the second day of Christmas. The red macarons are filled with peppermint tea infused white chocolate ganache, the white with cranberry, raspberry and strawberry tea infused white chocolate ganache.

Oh I love macarons, we have made these million times in school but even though you measure everything nearly every second time they get f....d up. I've managed to make perfect macarons maybe once, it's really hard to make them glossy and perfectly smooth and even. Sometimes they look like nipples, somethimes they are crumbly, sometimes they turn brown (I blame the oven at school, it's really shitty but we can't use the big better ovens for these since breads and other bigger pastry need them constantly) etc. I have tried three different recipes and one worked perfectly... only for one time. I don't really know is it just me or what's wrong :'D But you did a great job!
