This is the Father's Day cake I made for my dad this year. I usually make him mudcake, but I wanted to go for something different.
This cake is two layers of madeira sponge. The top layer has poached pears baked into it. The cake is layered with apricot jam, sprinkled with almonds, topped with a spun sugar halo and trimmed with a gold ribbon.
