Caged Brulee by cakecrumbs Caged Brulee by cakecrumbs
Having lots of fun with créme brûlées and sugar this week. Along with learning how to make springs, I taught myself how to make sugar cages as well. A bit easier than the springs to construct, but harder to remove in one piece. Took me a couple of breakages before getting the hang of it.

Haha, yeah, it's counter intuitive. I was letting it set before removing it but it's easier to remove while it's still cooling.

Either a ladle, an ice cream scoop or a spoon. I had several utensils on the go at once and don't remember which one this was from. Potentially the ice cream scoop.
