The dish is Bacon, Olive and Almond Filled Chicken and comes from Philadelphia's "Simply Heaven".
I chose this dish for the challenge as I've never tried the whole cutting a pocket into the meat thing and thought it was about high time I overcame my fear of ruining the meat. I should have stopped avoiding it years ago - it was pretty easy in the end.
