This week's recipe is a Tortilla Pie from Great Tastes' "30 Minute Meals".
I love the everlasting life out of tortillas and Mexican food/flavours. I'm always using them at home but had never even thought of using them like this. As soon as I saw it, I just had to make it.
Made a few changes in the method, most notably using a springform tin instead of the recommended pie dish. I pretty much never say this, but I actually think mine turned out better looking that the one in the book. I prefer the even look, rather than the domed one suggested in the method. .
