I have to admit to being totally afraid of pie. I attempted baking a few when I first started baking and, well, the shells were almost always a disaster. So I ran away from pies.

So when this month's Daring Bakers Challenge was all about pie, I was actually excited. It was time to see how far I'd come now that I have a lot more kitchen hours under my belt.

I ended up taking on three. The first one is the one that Cam and I both wanted to try. It's a pâte sablée filled with a salted caramel layer beneath a dark chocolate mousse. I stenciled some icing sugar over the top to make it a little more interesting.

It was so delicious, and totally restored my faith in my ability to make pies.

How do you cut your pies so nicely? Every time I go to cut pie it always comes out in a glob. I try to be careful too.

It depends a little on the filling! But if it's cooled enough to have set, and you use a sharp knife and a little care, it comes out okay.

Even precut slices end up as globs too :'(
