The third and final pie in the Life of Pie Daring Bakers Challenge. This one was my preference among the four on offer this month. It was pretty, and I wanted to make the pretty pie. I just love red, and I love it in food (as you may have noticed). I couldn't go past it.

Strawberries are painfully expensive right now, but I couldn't pass up the opportunity to try the strawberry version anyway.

My lattice is really simple. How well you cream the butter and sugar determines how rigid the dough is. I went for a lighter texture, and hence the dough was super delicate. Attempts at a fancy lattice were in vain, so I went with basic instead. I kept the strips thinner than most because I prefer the look of a dainty lattice. I adorned the centre with some pastry strawberries

Oh wow!
I was going to say that this looked like the pie I made a couple of weeks ago (which was delicious),
but then I spotted the decoration in the center of the pie! That looks fantastic. ^^

Lovely, mine have just started blooming, a little later than most peoples as I planted them late, a friend has an allotment and so far has picked 29lbs worth of strawberries and they have so much more to come! They are using them in every meal, giving it away to friends, family, colleagues, making cakes, wine and still have loads!

By the way, I don't suppose you have a good cherry pie recipe or something really good with cherries? I have two cans that I have to use, but I'm still looking for a good recipe.

This looks like it could work with cherries as well. Its similar to one of my grandmother's pies in that repect (she uses different fruit in the same type of pie sometimes)

btw just started to give this a try. While following the instruction you mentioned vanilla, but it's notpart of your ingredients list. Checked everything several times, but can't find vanilla anywhere :B
I just used vanilla sugar to have a hint of vanilla flavour now.

Ack. Sorry, I have a terrible habit of doing that. I suspect this is too late now but it would have been a little vanilla essence. The vanilla isn't essential, but (like salt) helps enhance other flavours.

I managed to get it finished without it :giggle:
For a first try it looked pretty ok, even though not as fancy as yours.

There was another issue i had with it though. When i did the Marmellata i got confused about the jam setting sugar. You mentioned 25g or to go along with the manufacturers instructions. They mentioned 250g sugar for 500g fruits. 25g seemed not enough, so i started with 100g but nothing got sticky, so i added a bit more. Together with the other sugar the result was awful sweet :B

Is it possible that you have different jam setting sugar?

Yeah it is quite likely. Every brand is different. It's a difficult recipe to explain because each product will be different. I was basically half following the daring bakers recipe, half following the manufacturers instructions and using instinct to fill in the gaps. It is possible to skip the setting sugar altogether. The first strawberry jam I ever made had no setting sugar and no pectin and it was fine, but then you need to be super accurate with the boiling temp.
