My baking hiatus is over! With that I bring you one of the most amazing things I have ever tasted: home-made puff pastry. If you've never experienced it, you have got to try this.

The dessert is a Mille-feuille, baked for the October Daring Bakers challenge. I chose to fill mine with chocolate custard and strawberries.

Wow, this looks great! You're right, homemade puff pastry is AMAZING. Kind of a pain though; you really need patience (at least in my experience). I'm impressed with the scorch marks on the top...I imagine that must have been difficult to achieve. And I'm trying to figure out how you did it, because it looks like you topped it with the powdered sugar first. Amazing!

Thanks so much. You are correct that it is powdered sugar (at least it is if I am correct in thinking that what you call icing sugar?) -- you use a red hot metal skewer to caramelise the sugar. I have a detailed explanation on another post if you need it I'll go find it for you.

I saw the technique years ago but I can't recall where (it might even be in one of my cake books). I remembered it when I was making another dessert a while ago.

I wish I could ship your cakes from australia... sadly even the best mail (Prolly $60 for HQ, fast shipping from australia) would still arrive to me as a crushed cake D:

Yeah, I wouldn't like to see the resulting cake after making it through rough handling by Australia Post, your postal service and everyone in between. Then it might not even make it through customs. D: Definitely need some teleportation.

Customs is much the same here. A friend of mine works in a brewery in NZ and he sent a mutual friend of ours some liqueur he made for Christmas. Customs wouldn't let her have it unless she went to go pick it up from them and paid $100 for the pleasure.

Lol I'm not... I wish I was! Lol I live in the ice-block state, Michigan TT.TT In a tiny town that you can have the name of, but no one will know it excepet google XDDDDDDDDDDDDDDDDDDDDD Okemos, MI. Ever heard of it? No? Of course =P

LOL in the U.S. I think Alchohol is not allowed period. But I think sweets are ok, coz I got some homemade japanese sweets from a friend in japan (they were hard candies, so they didn't die AS badly XD OMG THAT HORRIBLE! D: TT.TT THAT SUX!

You seriously have to try it! I've always been on the it-takes-too-long bandwagon, but it really doesn't. There's lots of resting time, but very little active time. It's deceptively simple. The end result was like half way between shortbread and the bought puff pastry I'm used to. It's buttery and flaky and sooooo good.

I'm sure in the future I will resume being lazy and use bought puff. But this will be worth the occasional effort. I'm thinking about making a really large batch and freezing portions for later.

Well, if you say that it's worth it, I might try it sometime. I just always imagined there wouldn't be much of a difference between store bought and home made. I've been wrong about my assumptions before though. hahaha
One could always make a huge batch and freeze some though, right?

Definitely! I'd love to hear what you think. The store-bought puff pastry here is pretty decent but who knows, maybe the difference between yours and home made could be different!
