Because I bake so much at home I've come to hate a lot of store-bought baked goods. So when you're hit with a sudden cookie craving and nothing but home made will do, but you also can't be bothered baking an entire batch of cookies, it creates a giant dilemma.
Emergency Cookies are my households name for ready to bake cookies. These cookies are able to be stored in the freezer and baked any time cookie craving time hits.
These six varieties of cookies are made from two batches of cookie dough. I hate making separate batches of dough so I make a blank canvas and alter it afterwards.
On the left are log cookies that have a shortbread consistency. Their flavours are caramel chip (top left), orange and poppy seed (top right), lemon and cranberry (bottom right) and cherry ripe (bottom left) so called as it's chocolate, cherry and coconut flavoured.
One the left is one of my favourite chocolate chip cookies recipes ever. It's got coconut in it, which is just nom. They're amazing right out of the oven with all their melty choc chips of goodness. The dough is divided in two, half flavoured chocolate with white chocolate chips and the other half is left vanilla and given dark chocolate chips.
