Another version of a joconde. This is the one I made for the extended family for Christmas as one of the dessert options.
As usual, it's a choc-peppermint ripple cake, covered in mousse, topped with dark chocolate ganache. The poinsettia is made from coloured white chocolate.
The main difference is that instead if using a decorating comb to pattern the joconde paste, I used a stencil. I bought my first food stencil (they are stupidly expensive for such a small piece of plastic) and was itching to try it on something so this seemed like a good excuse. I don't really like all the white, though. I kinda wish I'd coloured it the opposite way.
