Mac' Stack

These are some of a bunch of macarons I made for my birthday party celebrations. They're the exact same recipe I made for Christmas, only this batch I made purple, maroon and vivid green. The latter was filled with peppermint tea-infused white chocolate ganache, while the purple and maroon were filled with cranberry, raspberry and strawberry tea-infused white chocolate ganache.

I'm not putting this on the blog as they're nothing new. But I'm uploading a photo of them here in the aim of getting critique on the photography (not so much the macarons themselves as I'm pretty on top of the baking process and know what fine details need fixing aesthetically. Taste-wise they were perfection). I wanted to practice getting bokeh in the background. I clearly need to work on that setup some more. I was in a rush and the lighting was terrible (thunderstorms!) so I had big noise issues. I should have slowed down, used a tripod so I could lower the ISO and use a longer shutter speed. Anything on top of those points would be valuable feedback.

I find I get very flat, spread out macarons on silicone as opposed to baking paper. Endlessly frustrating. Will have to investigate to see if there's a way of fixing this, but everything I've seen so far mirrors my experience.
