It's getting cold here, or cold by Melbournian standards, so I'm turning a lot to winter warmers at dinner time. This soup is one of my favourites because it's everything good about carrot soup except I then basically dump and entire bunch of fresh coriander into it. And I really really love coriander. It's also coupled with a bunch of my favourite Moroccan spices: cumin, cinnamon, paprika and MOAR coriander.
I topped it with greek yoghurt, cracked pepper and MOAR coriander. We had it with toasted flatbread. Every time I make it I make a massive batch of it and we end up eating it for a week. I've already made it twice this autumn and have requests to make it again, so it looks like it will be featuring in my life a lot lately.
