Lamb is a very rare and special treat in our household, so when we do get to have it I like to dress it up and make something special put of it. This lamb rack is marinated with honey mustard, then coated in a parmesan, garlic and rosemary crust. I served it atop a potato galette with some favourite veggies as sides.
