This is the cake I made for my boyfriend's 28th birthday. The base is madiera cake, the centre a cross between a chocolate mousse and a cheesecake, and the top is an orange jelly made from fresh fruit.
The cake was the first time I'd been able to succeed with using gelatine. Since then I have used it a lot, but up until this point it was a massive failure every time.
