This is a cake I made forever ago when I needed to have a vegan cake option at my birthday. One awesome way of subbing out butter in a cake recipe is to use a vegetable puree, which led to the easy option of making a pumpkin spice cake. 

This is one of my favourite cake recipes so far. Everyone loved it so much that my partner's mum requested me to make it again for her birthday the following week. It was during the re-make that disaster struck and I found myself with no pumpkin puree and no time to rectify that. I ended up grabbing some carrots out of my fridge and making a carrot puree instead. The substitution turned out perfect, so this is definitely a cake you can have either way.

Looks very decadent :D I didn't know about vegetable puree as a butter substitute in baking, would you use it in the exact same measurements as what the recipe calls for in butter?

Typically it's best to replace half of the butter or fat [in oil-based cakes like this]. It works well for many cakes, muffins and brownies. You can replace it all but I assume you lose a bit in term of structure that way.
